1 instant light charcoal
2 Lb boneless skinless chicken thighs
2 Oz chipotles peppers in adobo sauce
4 jalapeño Jack cheese, thin slices

Instructions

Start grill with instant light charcoal and allow 10 minutes for the flame to die down.

Place chicken on the grill and cook for 15 minutes, flipping every 5 minutes.

Once chicken is almost done (160ºF internal temperature), place 1 chipotle pepper on each chicken thigh and top with a slice of cheese.

Place lid on grill until internal temperature of chicken is 165ºF and cheese has melted.
