Spring Time Pasta

Unsaved Spring Time Pasta

Ingredients

  • 1 Red bell pepper, cored, seeded and chopped
  • 1 Zucchini squash, chopped
  • 1 Carrot, chopped
  • 22 oz Pasta sauce
  • 8 oz Blended shredded cheese
  • 12 oz Vermicelli
  • 2 tbsp Olive oil

Instructions

  1. Combine pepper, zucchini, carrot and pasta sauce in a large microwave safe bowl; toss to coat.
  2. Cover bowl and heat in a microwave oven on high power for 6 minutes, tossing mixture every minute to prevent burning. Set aside.
  3. Cook vermicelli according to package directions, drain and place in pasta bowl.
  4. Add olive oil and toss to coat pasta.
  5. Add the hot pasta sauce and vegetable mixture and toss well.
  6. Top pasta with cheese and serve.
