- 1 Red bell pepper, cored, seeded and chopped
- 1 Zucchini squash, chopped
- 1 Carrot, chopped
- 22 oz Pasta sauce
- 8 oz Blended shredded cheese
- 12 oz Vermicelli
- 2 tbsp Olive oil

- Item, H-E-B 6 Cheese Italian Style Shredded Cheese Blend. Quantity: 1 each. Price: $2.89.
- Item, La Moderna Vermicelli Pasta Noodles. Quantity: 2 eachs. Price: $0.88.
- Item, H-E-B Classic Olive Oil. Quantity: 1 each. Price: $7.26.
Instructions
- Combine pepper, zucchini, carrot and pasta sauce in a large microwave safe bowl; toss to coat.
- Cover bowl and heat in a microwave oven on high power for 6 minutes, tossing mixture every minute to prevent burning. Set aside.
- Cook vermicelli according to package directions, drain and place in pasta bowl.
- Add olive oil and toss to coat pasta.
- Add the hot pasta sauce and vegetable mixture and toss well.
- Top pasta with cheese and serve.
