Portobello Mushroom Pizzas

Unsaved Portobello Mushroom Pizzas

Ingredients

  • 4 Large portabello mushrooms, stems and gills removed
  • 4 tsp Basil pesto
  • 1 cup Shredded mozzarella cheese
  • 1 Large tomato, sliced
  • 1/4 cup Fresh basil, chopped

Instructions

  1. Preheat oven to 400ºF.
  2. Place mushrooms on a foil lined sheet pan, stem side up.
  3. Spread pesto evenly on inside of mushrooms.
  4. Sprinkle with mozzarella, then add tomato slices and chopped basil.
  5. Bake 20 minutes until cheese is melted and bubbly.
  6. Let cool several minutes before serving.
