Vietnamese Coffee Panna Cotta

Ingredients

  • 2 1/2 tsp Gelatin powder
  • 1 cup Cold brew coffee, divided use
  • 1 qt Heavy cream
  • 1/2 cup Granulated sugar
  • 14 oz Sweetened condensed milk
  • 1 tsp Vanilla extract
  • 1/8 tsp Salt

Instructions

  1. In a small bowl bloom gelatin with 3 tablespoons of cold brew coffee.
  2. In a large, heavy-bottomed saucepan whisk together cream, sugar, vanilla, remaining coffee, condensed milk, and salt. Heat until it barely reaches a simmer, about 190ºF. Remove from heat and let cool for 15 minutes.
  3. Return pan to heat and whisk in gelatin until completely dissolved.
  4. Gently pour into molds, cover, and refrigerate until set, about 8 hours. To serve, top with whipped cream if desired.
