Unsaved Zucchini And Hominy

Ingredients

  • 2 tbsp Canola oil
  • 1/4 cup White onion, chopped
  • 3 Zucchini squash, chopped into 1/2 inch pieces
  • 2 Roma tomatoes, chopped
  • 15.5 oz Canned golden hominy, drained
  • 2 tsp Hill Country Fare Chili Powder

Instructions

  1. Heat oil in a large skillet over medium-high heat.
  2. Add onion and cook for 2-3 minutes or until golden brown.
  3. Add zucchini, tomato, hominy, chili powder and 1/2 cup water.
  4. Stir and cook for 5 minutes.
  5. Season with salt and black pepper.
  6. Reduce heat to medium-low and continue to cook for 10 more minutes or until zucchini is tender, stirring occasionally.
