Zucchini And Hominy

Ingredients
- 2 tbsp Canola oil
- 1/4 cup White onion, chopped
- 3 Zucchini squash, chopped into 1/2 inch pieces
- 2 Roma tomatoes, chopped
- 15.5 oz Canned golden hominy, drained
- 2 tsp Hill Country Fare Chili Powder
Instructions
- Heat oil in a large skillet over medium-high heat.
- Add onion and cook for 2-3 minutes or until golden brown.
- Add zucchini, tomato, hominy, chili powder and 1/2 cup water.
- Stir and cook for 5 minutes.
- Season with salt and black pepper.
- Reduce heat to medium-low and continue to cook for 10 more minutes or until zucchini is tender, stirring occasionally.
