Arugula and Parmesan Pizza

Ingredients

  • 1 Frozen pizza crust
  • 2 cups Arugula
  • 2 tbsp Extra virgin olive oil, plus more for pizza crust
  • 1 tbsp Fresh lemons, juiced
  • 1 cup Grated Pecorino Romano cheese
  • 6 Prosciutto slices, thinly sliced
  • 1/4 cup Parmesan cheese, shaved for topping
  • 1/2 tsp Kosher salt
  • 1 tsp Ground black pepper

Instructions

  1. Let pizza crust thaw per package directions.
  2. Combine arugula, olive oil, and lemon juice in a bowl. Toss to coat and set aside.
  3. Brush a little olive oil evenly over pizza crust then sprinkle with Pecorino Romano cheese.
  4. Spread prosciutto evenly over cheese. Bake per pizza crust package directions.
  5. Remove from oven and spread dressed arugula salad evenly over pizza.
  6. Sprinkle with shaved Parmesan cheese and season with salt and pepper.
