Chipotle Dressing With Salad

Ingredients

  • 15 oz Artichokes hearts, drained
  • 1 Dried chipotle pepper, stem and seeds removed and chopped
  • 1 cup Light sour cream
  • 1 cup Queso asadero, shredded
  • 1 Small red onion, thin sliced and rings separated
  • 10 oz Romaine lettuce

Instructions

  1. Layer artichokes, onion, hearts of romaine and shredded cheese in a large salad bowl.
  2. Cover salad with plastic wrap and chill for 30 minutes or more.
  3. Combine chipotle pepper and sour cream in a small bowl.
  4. Cover chipotle salad dressing with plastic wrap and chill until ready to serve.
  5. Before serving, add chipotle salad dressing to salad and toss to combine.
