Apple Walnut Salad

Ingredients

  • 2 Large granny smith apples, peeled, cored & thin sliced
  • 1 Lemon, juiced
  • 1 oz Baby spring mix
  • 1/4 cup Feta cheese crumbled
  • 1/2 cup Walnut halves and pieces
  • 1/2 tbsp Olive oil
  • 1/2 tbsp Red wine vinegar
  • 1/4 tsp Dijon mustard
  • 2 tbsp Pomegranate juice
  • 2 tbsp Water
  • 1/8 tsp Kosher salt
  • 1/8 tsp Ground black pepper

Instructions

  1. Toss apple slices in lemon juice then drain.
  2. Layer apple slices, salad greens, feta cheese and walnuts in a large salad bowl. Cover with plastic wrap and chill 15 minutes or until ready to serve.
  3. For the dressing: Combine all ingredients in a container with a lid, seal and shake.
  4. To serve, toss salad and add 2 tablespoons of dressing to each serving.
