Apple Walnut Salad

Ingredients
- 2 Large granny smith apples, peeled, cored & thin sliced
- 1 Lemon, juiced
- 1 oz Baby spring mix
- 1/4 cup Feta cheese crumbled
- 1/2 cup Walnut halves and pieces
- 1/2 tbsp Olive oil
- 1/2 tbsp Red wine vinegar
- 1/4 tsp Dijon mustard
- 2 tbsp Pomegranate juice
- 2 tbsp Water
- 1/8 tsp Kosher salt
- 1/8 tsp Ground black pepper
Instructions
- Toss apple slices in lemon juice then drain.
- Layer apple slices, salad greens, feta cheese and walnuts in a large salad bowl. Cover with plastic wrap and chill 15 minutes or until ready to serve.
- For the dressing: Combine all ingredients in a container with a lid, seal and shake.
- To serve, toss salad and add 2 tablespoons of dressing to each serving.
