  • 1/4 cup Fresh dill, finely chopped
  • 2 tbsp Toasted sesame seeds, plus more as needed

Instructions

  1. In a blender combine lemon juice, cumin, coriander, smoked paprika, garlic and olive oil. Puree until well combined and smooth. Season to taste and set aside.
  2. In a large salad bowl add carrots, mint, cilantro, parsley, dill and toasted sesame seeds. Toss everything to evenly combine.
  3. Add dressing to salad and toss well to coat. Season to taste and top with more sesame seeds if desired.
  4. Cover with plastic wrap, refrigerate and allow to sit for at least 30 minutes to allow flavors to meld.
  5. Chef's Note: Add diced jalapeños or serrano peppers to salad for extra spice and flavor if desired.
