Air Fryer Crispy Salmon with Roasted Tomatoes

Serves 2
Ingredients
- 2 Fresh wild sockeye salmon, about 6 ounces each
- 4 tbsp Extra virgin olive oil, divided use for both salmon and tomatoes
- 12 oz Cherry tomatoes
- 1 tsp Garlic clove, minced or zested
- 1/2 tsp Ground fennel
- 5 3/4 qt Air fryer
Instructions
- Season salmon with salt and pepper liberally and drizzle with a little olive oil. Place salmon in center of 5.5 quart air fryer basket.
- In a bowl, combine tomatoes, garlic, ground fennel, olive oil, and a pinch of salt and pepper. Toss to combine.
- Add tomatoes to fryer basket set around salmon. Set air fryer to 400°F for 10 minutes.
- Serve with roasted tomatoes over salmon; season to taste.
- Chef’s Note: This recipe works great with any size air fryer but cook time will vary based on machine size.
