Fish Tacos with Lemon Garlic Slaw

Ingredients

  • 2 tbsp Fresh lemon juice
  • 1 tbsp Garlic salt with parsley, divided use
  • 2 tbsp Jalapeño pepper, minced
  • 2 tsp Capers, rough chopped
  • 1/2 cup Mayonnaise
  • 8 oz Shredded cabbage
  • 1/2 cup Cherry tomatoes, halved
  • 8 oz Mahi mahi, thawed and patted dry
  • 12 Corn tortillas, warmed
  • 1 Medium avocado, pitted, diced or mashed

Instructions

  1. In a medium bowl combine lemon juice, half the garlic salt, jalapeños, capers, and mayonnaise. Stir until combined.
  2. Add cabbage, stir well then fold in tomatoes, cover, and refrigerate.
  3. Preheat grill to medium-high. Season fish with remaining garlic salt and spray with non-stick spray.
  4. Lay fish on grill and cook 2 to 3 minutes per side until fish flakes easily.
  5. To serve, lay 2 tortillas on top of each other, add a piece of fish and top with lemon garlic slaw. Garnish with avocado if desired.
