Ingredients

  • 1/4 cup Vegan pesto
  • 1 Chicken breast, cut into 1 to 2 inch cubes
  • 1 Onion, cut into 1 inch pieces
  • 1/4 cup Shredded Parmesan
  • 1 tsp Garlic powder
  • 1 tbsp Olive oil
  • 12 oz Broccoli florets

Instructions

  1. Preheat oven to 400ºF. Line a sheet pan with foil and set aside.
  2. Place chicken in a large bowl and add onions, broccoli, pesto, Parmesan, and 1 tbsp of olive oil. Season with 1 tsp salt, 1/2 tsp of pepper, and garlic powder. Toss to coat.
  3. Transfer to prepared sheet pan and spread out evenly. Roast for 20 minutes or until chicken is cooked through.
