Warm Parsley and Parmesan Pasta

Serves 6
Ingredients
- 4 Garlic cloves, peeled, thinly sliced
- 17.5 oz Dried pasta
- 1/4 cup Olive oil, plus more as needed for drizzling
- 4 tbsp Unsalted butter
- 2 tsp Ground black pepper, plus more as needed
- 1 cup Fresh Italian parsley, roughly chopped
- 3/4 cup Grana Padano cheese, plus more for garnishing pasta
Instructions
- Bring a large pot of water to a boil then cook pasta according to package instructions. Drain, reserving 1/2 cup of pasta water for sauce.
- Drizzle a little olive oil over pasta to keep it from sticking while making sauce. Set aside.
- In a large non-stick pan or using the same pot used for the pasta, add olive oil and set over medium heat.
- Add garlic and stir-fry 1 to 2 minutes or until it just starts to lightly brown.
- Add pasta water, butter, and pepper. Allow sauce to simmer before adding in cooked pasta, parsley and cheese. Remove from heat and toss to coat.
- Season to taste as needed and garnish with more cheese.
- Chef's Note: I like to fold in about 1 tablespoon of fresh lemon zest to this dish as soon as I turn off the heat to add a little depth of flavor.
