Almond-Crusted Chicken

Unsaved Almond-Crusted Chicken

Ingredients

  • 1 cup Baguette, crush for bread crumb
  • 1 lb Boneless, skinless chicken breasts
  • 1 Canola oil no-stick cooking spray
  • 1/8 tsp Ground black pepper
  • 2 tbsp Honey mustard
  • 1/8 tsp Kosher salt
  • 1/2 cup Low fat buttermilk
  • 3/4 cup Sliced almonds
  • 1/4 cup Unbleached all purpose flour

Instructions

  1. Heat oven to 450°F.
  2. Cover a large baking sheet with foil.
  3. Lay chicken out on a sheet of wax paper.
  4. Season both sides with salt and pepper, then sprinkle with flour; turn to coat and shake off excess.
  5. Combine breadcrumbs with almonds in a shallow dish or on a plate.
  6. Blend buttermilk with mustard in a separate shallow bowl.
  7. Dip chicken pieces in buttermilk to coat both sides, then dredge in almond mixture.
  8. Heat a large non-stick skillet over medium-high heat 3 minutes.
  9. Cook chicken in skillet in 2 batches, 1 1/2 minutes per side or until browned. Spray skillet in between batches.
  10. Remove chicken to foil-lined sheet and spray tops with non-stick spray.
  11. Bake 8 to 10 minutes until no longer pink or until internal temperature of chicken reaches 165°F.
