Grilled Chicken made with Non-dairy Yogurt

Ingredients
- 1 cup Higher Harvest Dairy-free Plain Protein Yogurt
- 1 tbsp Fresh lemon zest
- 1 tbsp Dried oregano
- 1 1/2 tsp Kosher salt, plus more as needed for seasoning
- 1 1/2 tsp Cracked black pepper, plus more as needed to taste
- 1 tsp Granulated garlic or garlic powder
- 2 lb Natural chicken breasts
Instructions
- In a large bowl add yogurt, lemon zest, oregano, salt, black pepper, and garlic powder, and whisk to combine.
- Place all the chicken breasts in the yogurt mixture and turn to coat all sides completely.
- Cover bowl with plastic wrap and refrigerate for at least 8 hours (overnight is recommended) to allow chicken to marinate.
- When chicken has marinated, transfer to a plate and set aside while grill preheats to 350ºF or medium-high.
- Spray preheated grill liberally with non-stick spray. Arrange chicken on grill and cook for 6 to 8 minutes per side or until nicely marked.
- Move chicken over indirect heat and continue to cook until it reaches an internal temperature of 165ºF. Allow to rest for 10 minutes before serving. Season to taste as needed.
