Thin Crust Spinach & Feta Pizza

Serves 4
Ingredients
- 1 Whole wheat 12" pizza crust
- 1/4 cup Traditional pizza sauce
- 1 cup Reduced fat crumbled Feta Cheese
- 1 tbsp Extra virgin olive oil
- 9 oz Baby spinach, thinly sliced
- 2 cups Mushrooms, thin sliced
- 1 cup Yellow onions, chopped
- 1/2 tsp Crushed red pepper flakes, optional
Instructions
- Heat oven to 425°F.
- Line a large baking sheet with foil, and place pizza crust on prepared baking sheet.
- Spread pizza sauce on crust. Sprinkle with 1/2 cup feta cheese and set aside.
- Combine olive oil, spinach, mushrooms, onion and crushed red pepper in large microwave safe bowl.
- Cover with plastic wrap, microwave on high for 1 minute, stir, and microwave 1 more minute.
- Spread spinach mixture over feta cheese on crust. Sprinkle with remaining feta cheese.
- Bake on bottom oven rack 8 minutes or until cheese melts and begins to turn golden.
- Remove from oven and cut into 8 slices. Serve and enjoy!
