  • 28 oz H-E-B Caulibits, 2 packages
  • 3 Large eggs, beaten
  • 1/2 cup Almond flour
  • 1 1/2 cups Grated Parmesan cheese, grated

Instructions

  1. Fill large saucepan with water and bring to a boil. Add in caulibits and cook 3 to 4 minutes then strain and transfer to baking sheet to cool.
  2. Once cool enough to handle, empty into clean dish towel then squeeze out as much excess water as possible, then transfer to bowl.
  3. Preheat oven to 425ºF.
  4. Mix caulibits with eggs, almond flour and Parmesan cheese, then season to taste with salt and pepper.
  5. Let mixture stand 15 minutes then place 1/2 of caulitbit mixture on lined baking sheet or 8 inch pizza pan. If using standard baking sheet, form into 1/4 inch thick pizza crust.
  6. Place crust in oven and bake 45 minutes or until edges are browned, crisped and center is firm.
  7. Remove from oven and carefully flip. Return to oven for an additional 5 minutes. Remove and either cool completely and wrap for later use, or top with favorite toppings and bake until desired doneness.
  8. Chef's Note: After making pizza, let cool 10 minutes on baking rack to set up and become more firm.
