Unsaved Scrambled Tofu Tacos

Ingredients

  • 1 tbsp Extra virgin olive oil
  • 6 oz Pico de gallo
  • 8 oz Hard tofu, drained
  • 8 Yellow corn tortillas
  • 4 oz Dairy free parmesan

Instructions

  1. Heat oil in a large skillet over medium.
  2. Add in the pico and cook for 3 minutes.
  3. Crumble in tofu and cook for 4 minutes tossing frequently.
  4. Heat tortillas in a dry skillet over medium-high.
  5. Serve scramble in tortillas with dairy free Parmesan.
