Ingredients
- 1 tbsp Extra virgin olive oil
- 6 oz Pico de gallo
- 8 oz Hard tofu, drained
- 8 Yellow corn tortillas
- 4 oz Dairy free parmesan
Instructions
- Heat oil in a large skillet over medium.
- Add in the pico and cook for 3 minutes.
- Crumble in tofu and cook for 4 minutes tossing frequently.
- Heat tortillas in a dry skillet over medium-high.
- Serve scramble in tortillas with dairy free Parmesan.
