Soyrizo and Egg Breakfast Tacos

Ingredients

  • 1 tsp Olive oil
  • 1/2 lb Soy chorizo
  • 16 fl oz Real egg product
  • 12 Wheat flour tortillas
  • 1 cup Large avocado, mashed
  • 1 cup Picante salsa

Instructions

  1. Heat a large skillet on medium-high.
  2. Add oil then the soyrizo, breaking up with a fork. Cook until firm.
  3. Add eggs and heat until cooked through.
  4. Heat tortillas.
  5. To serve, spread 1 tablespoon of mashed avocado on each tortilla, add a spoonful of soyrizo egg mixture and top with salsa.
