Texas Turkey Chili

Ingredients

  • 1 tsp Extra virgin olive oil
  • 1 lb Lean ground turkey
  • 2 tbsp Chili powder
  • 1 tsp Ground cinnamon
  • 30 oz Pinto beans with jalapenos and bacon, drained and rinsed
  • 14.5 oz Diced tomatoes with green chiles
  • 2 1/2 cups Low sodium chicken broth
  • 1/8 tsp Kosher salt
  • 1/8 tsp Ground black pepper
  • 1/2 cup Shredded cheddar cheese

Instructions

  1. In a medium stockpot, add oil and cook ground turkey over medium-high heat 5 minutes or until no longer pink.
  2. Add chili powder and cinnamon while cooking and break into crumbles.
  3. Stir in beans, tomatoes and chicken broth and bring to a boil.
  4. Add salt and pepper, reduce heat to medium, and simmer until desired consistency, about 10 minutes.
  5. Garnish with cheese, chopped onions or tomatoes before serving.
  6. Chef's Note: Ground turkey can be substituted for ground beef, pork or chicken.
