Unsaved Meatless Beefy Tostadas with Avocado

Ingredients

  • 8 Low carb tortillas
  • 1/4 fl oz Avocado oil spray
  • 1 tbsp Avocado oil
  • 1 lb Plant-based ground meat alternative
  • 1.2 oz Taco seasoning mix
  • 2 Avocados, remove skin and pit, cut into quarters and slice into 1/8" slices lengthwise
  • 1/4 cup Queso fresco, crumbled
  • 2 fl oz Mi Tienda Salsa Roja
  • 1/4 bunch Cilantro, rough chop leaves for garnish

Instructions

  1. Heat oven to 375º F. Meanwhile, lightly coat both sides of tortillas with avocado oil spray and place on a baking sheet with a wire rack. Bake until light golden brown, about 8 minutes.
  2. In a medium sauté pan, heat avocado oil over high heat. Add ground meat alternative and cook until lightly browned. Add taco seasoning mix and 1/2 cup of water, and stir to incorporate. Cook until water evaporates and mixture begins to sizzle in the pan.
  3. Place 2 tablespoons of cooked ground meat alternative on each tostada shell. Top with a fanned avocado quarter, queso fresco and a drizzle of salsa roja. Garnish with chopped cilantro and serve.
