Roja Chicken Taco

Ingredients
- 2 lb Boneless skinless natural chicken thighs
- 1 tbsp Central Market Peri Peri Seasoning
- 8 Carb sense tortillas
- 3 cups Organics baby spring mix
- 1/4 cup Cilantro
- 2 tbsp Mi Tienda Roja Sauce
Instructions
- Heat a non-stick skillet to medium-high heat.
- Season chicken with and spray a little non-stick spray in the pan and add chicken to the pan.
- Cook chicken 4 to 5 minutes on each side until internal temperature is 165ºF.
- Using a cast iron or tortilla pan, heat tortillas until slightly warm. Remove from pan.
- Open spring mix, add cilantro and toss.
- To build tacos, place chicken on warm tortillas, add a little spring mix-cilantro salad and top with Mi Tienda Roja Sauce.
