Bagel Not Included Sheet Pan Chicken Dinner

Ingredients
- 5 tbsp Everything Bagel Seasoning, divided use
- 16 oz Asparagus bunch, washed and trimmed
- 2 lb Boneless, skinless chicken breasts, about 3 each
- 4 oz Cream cheese, softened
- 3 tbsp Grapeseed oil, divided use
- 1/4 cup Mozzarella cheese, shredded
- 3 oz Red bell pepper, about 1 bell pepper, stem and seeds removed, large diced
- 12 oz Red potatoes, about 4 each, quartered
- 3 oz Yellow onions, about 1/2 of an onion, large diced
Instructions
- Preheat oven to 375°F. In a small bowl, mix together cream cheese, mozzarella, and 1 tablespoon of Bagel Not Included Spice Blend.
- Cut about a 3-inch wide pocket into the thick side of each chicken breast (almost to the other side), but do not cut all the way through.
- Stuff chicken breasts with cream cheese mixture then place on a large sheet pan. Arrange potatoes, onions, and bell peppers around chicken.
- Drizzle 2 tablespoons of grapeseed oil over vegetables and chicken then season with 3 1/2 tablespoons of Bagel Not Included Seasoning. Bake 25 minutes or until chicken reaches an internal temperature of 165°F.
- Toss asparagus with remaining grapeseed oil and Bagel seasoning. Place around chicken and potatoes and bake about 10 minutes.
