Vegan Taco Wraps

Serves 4
Ingredients
- 1 tbsp Extra virgin olive oil
- 1 lb Extra firm tofu, drained and crumbled
- 1 tsp Ground cumin
- 1/2 tsp Turmeric
- 1/2 tsp Ground black pepper
- 1 tsp Dried oregano
- 1 tsp Chili powder
- 1 Red bell pepper, cord, seeded and julienned
- 1 cup White onion, julienned
- 11 Butter lettuce leaves
- 1 Roma tomato, diced
- 1 Haas avocados, diced
- 1/2 cup Fresh cilantro, chopped
- 1 Limes, cut into wedges
Instructions
- In a large bowl, combine tofu with all of the spices until well combined.
- Place a large skillet over Medium heat. Add 1 Tablespoon oil. When hot, add tofu and cook until well browned, about 10 minutes. Set aside.
- Place a second pan over Medium heat. Add remaining oil. When hot, add onions and peppers. Cook until slightly tender.
- To build taco wraps, fill lettuce leaves with 1/3 cup tofu filling and top with bell peppers and onions, tomatoes, avocado and cilantro.
- Garnish with lime wedge.
