Vegan Taco Wraps

Unsaved Vegan Taco Wraps

Ingredients

  • 1 tbsp Extra virgin olive oil
  • 1 lb Extra firm tofu, drained and crumbled
  • 1 tsp Ground cumin
  • 1/2 tsp Turmeric
  • 1/2 tsp Ground black pepper
  • 1 tsp Dried oregano
  • 1 tsp Chili powder
  • 1 Red bell pepper, cord, seeded and julienned
  • 1 cup White onion, julienned
  • 11 Butter lettuce leaves
  • 1 Roma tomato, diced
  • 1 Haas avocados, diced
  • 1/2 cup Fresh cilantro, chopped
  • 1 Limes, cut into wedges

Instructions

  1. In a large bowl, combine tofu with all of the spices until well combined.
  2. Place a large skillet over Medium heat. Add 1 Tablespoon oil. When hot, add tofu and cook until well browned, about 10 minutes. Set aside.
  3. Place a second pan over Medium heat. Add remaining oil. When hot, add onions and peppers. Cook until slightly tender.
  4. To build taco wraps, fill lettuce leaves with 1/3 cup tofu filling and top with bell peppers and onions, tomatoes, avocado and cilantro.
  5. Garnish with lime wedge.
