Spiced Bean and Cheese Breakfast Tacos

Ingredients

  • 2 tbsp Unsalted butter, plus more as needed for cooking eggs
  • 4 Large eggs, whisked together in a bowl with a pinch of salt and pepper
  • 6 Ready to cook yellow corn tortillas, plus more as needed
  • 1 cup Refried pinto beans, or as needed, heated according to pkg. instructions
  • 1 cup H-E-B Carolina Reaper Shredded Cheese, plus more as needed

Instructions

  1. Place a small non-stick pan over medium heat, add butter and cook eggs until soft scrambled, or sunny side up if preferred. Set aside.
  2. Heat a large non-stick pan or electric griddle on medium-high. Cook tortillas a few minutes on each side or until fully cooked.
  3. Spread a spoonful of beans on each tortilla followed by cheese and a few tablespoons of egg. Work quickly to keep everything hot so cheese melts.
  4. Roll each taco up in foil and keep in a warm oven (about 250ºF) for later or simply fold and eat. Garnish with any condiments desired.
