Keto Mahi Fish Tacos

Ingredients
- 8 Fish taco mahi chunks, thawed and patted dry
- 1 tbsp All purpose seasoning
- 1 cup Shredded cabbage
- 1 Medium Large avocado, seed removed, large diced
- 2 tbsp Fresh cilantro, finely chopped
- 1/3 cup Cherry tomatoes, halved
- 3/4 tsp Kosher salt
- 1/4 tsp Ground black pepper
- 2 tbsp Fresh lime juice
- 1 tbsp Extra virgin olive oil
- 4 Keto tortillas
- 1/4 cup Queso fresco
Instructions
- Preheat grill to medium-high heat. Spray fish with non-stick spray and season both sides with Mi Tienda All Purpose Seasoning.
- While grill is heating, make slaw. Combine cabbage, avocado, cilantro, and tomatoes in a large bowl. Season with salt and pepper, add lime juice and olive oil, and stir well to combine. Cover and chill until ready to use.
- Grill fish for 2 to 3 minutes per side until it begins to flake and has dark grill marks. Remove to a plate and keep warm.
- Place tortillas on grill and cook 1 to 2 minutes per side until slightly puffed and edges are browned.
- To assemble tacos, lay 2 pieces of fish in the center of each tortilla. Top with 2 to 3 tablespoons of slaw and sprinkle with queso fresco.
