Roasted Tofu with Thai Style Chimichurri

Ingredients
- 5 Garlic cloves, smashed
- 1 cup Fresh basil, leaves packed
- 1/2 cup Extra virgin olive oil
- 1 cup Fresh cilantro, leaves only packed
- 1 tbsp Fresh ginger root, peeled and zested
- 1 tbsp Lemongrass, roughly chopped
- 1/4 cup Limes, juice
- 2 Serrano peppers, stemmed and seeded
- 12 oz Extra firm tofu
- 1/4 cup Toasted sesame oil, as needed for brushing tofu
- 1/4 cup Shallot(s), diced
Instructions
- Preheat oven to 400ºF.
- Lay tofu slices onto a sheet pan lined with parchment paper. Brush each slice with sesame oil and season liberally with salt and pepper.
- Roast tofu for 30 to 40 minutes or until just crispy. Meanwhile, make chimichurri sauce.
- In a food processor, combine peppers, cilantro, basil, ginger, garlic, lemongrass, shallots and lime juice. Pulse until smooth then pour into a bowl.
- Whisk olive oil into sauce and season to taste with salt and pepper as needed.
- Drizzle sauce over each slice of tofu and serve over rice or veggies.
