Ingredients

Recipe makes 4 Servings

1 Lb tilapia, cut into strips
1 Tsp southwest seasoning
1 non-stick cooking spray
8 white corn tortillas
5 Oz H-E-B Mild Pico de Gallo
8 Oz shredded cabbage
1 cup(s) shredded Mexican blend cheese

Instructions

Preheat oven to 400°F.

Place tilapia on a foil lined sheet pan and sprinkle with seasoning. Bake for 10 minutes or until fish is no longer translucent.

Heat a griddle or skillet to medium-high and spray with non-stick spray.

To make each quesadilla, place 1 tortilla on hot griddle and top half of tortilla with fish, pico de gallo, cabbage and cheese.

Fold over tortilla and cook each side until cheese has melted and tortilla is crisp.
