1 cup(s) H-E-B Organics Whole Milk Plain Yogurt
1 Tsp coriander
1 Tsp cumin
1 Tsp Central Market Organics Whole Mediterranean Oregano
2 Tbsp lemon, juiced
1 Tbsp Gourmet Garden Lightly Dried Chili Pepper
2 garlic cloves
1/3 cup(s) fresh mint, leaves tightly packed
1/2 cup(s) extra virgin olive oil, divided use
2 Lb fresh okra
1 Tsp kosher salt, plus more as needed
1 Tsp cracked pepper, plus more as needed

Instructions

Preheat oven to 400ºF.

Make dipping sauce by adding yogurt, coriander, cumin, oregano, lemon juice, pepper flakes, garlic, mint, and half of olive oil.

Blend until smooth and season to taste as needed. Refrigerate until ready to use.

In a bowl, combine okra, salt, pepper and remaining olive oil, toss to coat and place on a sheet pan. Roast in oven 30 to 45 minutes or until nicely browned and okra are tender.

Allow to cool slightly and serve with dipping sauce.
