Recipe makes 24 Servings

2 1/2 cup(s) all purpose flour
1 Tsp baking powder
1/2 Tsp baking soda
1 Tsp kosher salt
4 Oz unsalted butter, softened at room temperature
1 cup(s) Nutiva Organic Shortening
1 1/4 cup(s) granulated sugar
1 1/2 Tbsp lemon, zested
1 Tbsp Nielsen Massey Vanilla Bean Paste
2 large eggs
1/3 cup(s) decorative sparkling sugar, plus more as needed for dusting cookies

Instructions

Preheat oven to 350°F.

In a bowl combine flour, baking powder, baking soda, and salt. Whisk to combine and set aside.

In a stand mixer, cream butter, shortening, sugar, zest, and vanilla bean paste until fluffy. Add eggs one at a time to allow them to incorporate fully.

Add dry ingredients to wet ingredients slowly, a 1/2 cup at a time allowing to blend fully.

Line a cookie sheet pan with parchment paper.

Spoon out about a 2 ounces of cookie dough 2-inches apart or use a traditional cookie press and place them right onto parchment paper.

Sprinkle cookies with sparkle sugar and bake 14 to 18 minutes or until set and starting to brown.

Depending on size, recipe makes 2 to 3 dozen spritz sized cookies.
