2 1/2 cup(s) H-E-B The Baker's Scoop All Purpose Flour
1 1/2 Tsp baking powder
1 cup(s) Sweet "N Low Granulated Sugar Subsitute
1 cup(s) semi sweet chocolate chips
2 cup(s) powdered sugar, packed
3 eggs
1/2 cup(s) H-E-B Select Ingredients Baker's Scoop Cocoa
2 Tsp Hill Country Fare Instant Coffee
1/3 cup(s) powdered sugar, to sprinkle on top of cookies

Instructions

Heat oven to 350°F.

Line 3 cookie sheets with parchment paper and set aside.

Sift together flour and baking powder and set aside.

Combine olive oil and chocolate chips in a microwave-safe bowl. Cover with plastic wrap and microwave on high power for 1 minute. Stir until chocolate is melted.

Combine 2 cups powdered sugar and melted chocolate in a mixer bowl.

Mix on medium speed for 2 minutes. Beat in eggs, one at a time, on medium speed (about 1 minute). Add flour one cup at a time on low speed (about 2 minutes). Add cocoa powder and instant coffee.

Drop dough by rounded tablespoons (about 2 tablespoons each) on prepared cookie sheets. Sift powdered sugar onto each cookie.

Bake for 17 minutes or until golden brown.
