How to Select and Boil Lobster

Most people think you can only experience lobster at a restaurant—not true! H-E-B Chef Brent shows you how to prepare live lobster in the comfort of your kitchen.

 

You can pick up live lobster from the H-E-B Seafood Department. To select the best lobster make sure it is active and healthy. The lobster should raise its claws, the feet should be active and tail fully extended. Avoid any lobsters that are limp or tired looking.

 

How to Make a Court Bouillon and Boil Live Lobster
You will need the following items, available at H-E-B:

 
  • 2 gallon stockpot
  • Oven mitt
  • Tongs
  • Plate

Step-by-step Instructions
 


Step 1: Make Court Bouillon

The court bouillon is the flavorful liquid to cook your lobster.

Place all ingredients into a 2 gallon stockpot and simmer for 10 minutes.

Tip: You'll want to make sure you have enough liquid to cover the lobsters.
 
 

Step 2: Boil Lobsters

Submerge the lobsters in the stockpot and place the lid on top but not completely closed, so the side can vent.

Turn heat to high, bring to a boil then reduce heat to a simmer.

Cook lobsters for 10-12 minutes or until the shell turns bright red.
 


Step 3: Lobsters Are Ready

Use tongs to remove the lobsters and place on a clean plate.
 
 

Serve Boiled Lobster

Serve with fresh sliced lemons and drawn butter.
