Yucca Mash with Orange Pepper

1 1/2 Lb yucca root, peeled and cut into 1 inch pieces
1 Lb russet potato, peeled and cut into chunks
2 garlic cloves
2 Tbsp olive oil
1 Tsp Mi Tienda Orange Pepper

Instructions

Place yucca in a medium pot and fill with water and season generously with salt. Bring to a rapid boil for 5 to 8 minutes until water becomes murky then drain, add potatoes, then cook until potatoes are tender.

Drain yucca and potatoes and return to pan. Let stand 15 minutes or so to allow excess moisture to evaporate.

Return pan to low heat, and add in olive oil and orange pepper. Gently fold until combined then serve.

Chef's Note: Do not over mix yucca or it will get gummy.
