Recipe makes 6 Servings

2 cup(s) watermelon, finely chopped
1/2 cup(s) hot house cucumbers, finely chopped
1/2 cup(s) honeydew melon, finely chopped
1/4 cup(s) red onions, thinly sliced
1 large jalapeño pepper, seeded and sliced
1/4 cup(s) cilantro, minced
1 Tbsp basil, chopped
1 Tbsp mint, chopped
2 lime, juiced
1/4 cup(s) coconut sugar
1/4 cup(s) water

Instructions

Mix all ingredients, except coconut sugar and water, and chill at least 30 minutes to allow flavors to blend.

In a small saucepan place 1/4 cup of coconut sugar with 1/4 cup of water and bring to a simmer to melt the sugar mixture.

Cool the coconut and sugar mixture in refrigerator then pour over the salad like a dressing, toss everything to combine.
