True Texas Chicken & Rice

Recipe makes 4 Servings

1 H-E-B Instant Long Grain Rice
2 Lb H‑E‑B Natural Boneless Skinless Chicken Breasts, cut into strips
1 Tbsp True Texas BBQ Salt & Pepper Blend
7 Oz H-E-B 3 Color Diced Bell Peppers
14 Oz H-E-B Diced Red Onions

Instructions

Prepare rice per package instructions and set aside.

Place a large pan over medium-high heat. Season chicken with salt & pepper blend and sear (use a little oil for best results) for 4 minutes. Remove chicken from pan and set aside briefly.

To the same pan, add peppers and onions. Stir and cook for 2 minutes then return chicken to pan.

Lower heat to medium or place in oven at 375ºF (if pan is oven safe) and cook until chicken has an internal temperature of 165ºF, about 10 minutes if cooked in oven or 15 minutes on the stove top.

Rest for 5 minutes then serve over rice. Enjoy!
