Spanish Style Bruschetta

2 large tomatoes, grated, skins removed
1 Tbsp garlic cloves, minced or grated finely
2 Tbsp Seville Spain Extra Virgin Olive Oil
1 baguette, sliced thin

Instructions

Preheat oven to 350˚F.

In a bowl combine grated tomato, garlic and olive oil. Mix well to combine. Season to taste with salt and pepper as needed; cover and chill 30 minutes.

Toast baguette slices 8 to 10 minutes or until bread is just slightly browned.

Top toasted bread with bruschetta.

Chef's Note: If desired, garnish with additional olive oil, a sprinkle of sea salt and fresh basil.
