Instructions

  1. Preheat oven to 375°F.
  2. In a bowl combine flour, salt, cinnamon, oats and baking powder; whisk to combine.
  3. In a stand mixer, combine butter, brown sugar, vanilla extract and cream together.
  4. Add eggs one at a time making sure to fully incorporate before each addition.
  5. Turn mixer to high and allow mixture to get fluffy.
  6. Turn mixer to low and slowly add dry ingredients, a cup at a time allowing dry ingredients to completely absorb before each addition.
  7. Scoop out cookies onto a sheet pan lined with parchment paper about the size of a golf ball or larger if desire.
  8. Bake for 15 to 20 minutes for softer cookies or for more crunchy bake 20 to 25 minutes. Allow to cool before serving.
  9. Chef's note: If you like your oatmeal cookies with dried fruit or nuts add them after the dry ingredients and mix on low speed to just combine.
