1 1/2 Lb Season's Select Fresh Baby Potato Medley
2 cup(s) Smoked Green Onion Vinaigrette, (recipe on HEB.com)
1/2 cup(s) fresh parsley, finely chopped
1/2 cup(s) green onions, finely chopped

Instructions

Add potatoes to cold salted water. Bring to a low boil and cook for 15 to 20 minutes, or until potatoes are tender, but not soft. Drain water.

Pour 1 cup of smoked green onion vinaigrette over warm potatoes. Allow to cool until potatoes are comfortable to handle.

Carefully thread potatoes onto skewers. drizzle with additional vinaigrette and warm briefly in a hot oven before serving.

Sprinkle with fresh parsley and chopped green onions if desired.
