1 Tbsp canola oil
1 cup(s) yellow onion
1 1/2 Lb H-E-B 96% Extra Lean Ground Beef
1/4 Tsp kosher salt
1/4 Tsp H-E-B Black Pepper
1/2 Tsp dried thyme
1/2 cup(s) H-E-B Reduced Sodium Beef Broth
16 Oz H-E-B Mixed Vegetables
2 cup(s) Hill Country Fare Instant Mashed Potatoes

Instructions

Preheat oven to 400°F.

Heat oil in a large saucepan over medium heat. Add onion and sauté until soft.

Add ground beef and cook until beef is no longer pink. Season with salt, pepper, and thyme.

Stir in beef broth and frozen vegetables. Lower heat and cover saucepan until vegetables are warmed through.

Pour beef mixture into a deep 9x13-inch baking dish.

Spread mashed potatoes over beef mixture, leaving peaks in the mashed potatoes.

Bake 10 minutes or until potato peaks are golden brown. Allow 5 minutes to cool before serving.
