Recipe makes 8 Servings

2 bunches of golden or red beets, stems trimmed and beets thoroughly washed
3 Lb kosher salt, or as much as needed to cover beets completely

Instructions

Preheat oven to 375ºF.

Place beets in a loaf pan or any deep roasting pan and cover completely with salt (up to the stems).

Cover pan with foil and bake 1 to 1.5 hours or until beets are fork tender. Keep covered and set aside to cool (about 30 minutes).

Rinse beets under cold water to remove excess salt and peel or wipe skins off.

Slice and serve on a salad or anyway you like.
