Salmon with Red Pepper Pesto

Ingredients

Recipe makes 4 Servings

4 fresh or frozen 6 oz. salmon fillets, thawed
3/4 Tsp kosher salt
1 3 second spray of non-stick cooking spray
3 Oz roasted bell pepper, rinsed, drained and chopped
1 Tbsp tomato paste
1 Tsp olive oil
7 natural whole almonds
1 garlic

Heat grill pan over medium-high heat.

Sprinkle fish evenly with 1/2 teaspoon of salt, reserve 1/4 teaspoon for pesto.

Coat pan with cooking spray. Add fish and cook 4 minutes on each side or until fish flakes easily when tested with a fork or until desired degree of doneness.

Meanwhile, combine remaining 1/4 teaspoon salt, bell peppers, tomato paste, olive oil, almonds and garlic in a blender or food processor, and process until pesto is smooth.

Serve pesto over fish.
