Salmon Tacos with Apple Jicama Slaw

1 Granny Smith apple, peeled, core and shredded
1 jicama, peeled and shredded
1/2 cup(s) cilantro bunch, chopped
1 jalapeno pepper, seeded and chopped
1 lime, juiced
1 non-stick cooking spray
3/4 Lb salmon fillets, skin removed
1/4 Tsp salt
1/4 Tsp black pepper
1/2 Tsp ground cumin
8 corn tortillas

Instructions

To make slaw, combine apple, jicama, cilantro, jalapeño and lime juice in a bowl. Set aside.

Lightly spray a large, non-stick skillet with non-stick cooking spray and place over medium-high heat.

Season salmon with salt, pepper and cumin. Sear 3 to 4 minutes on each side.

Place a portion of salmon and slaw inside each tortilla and serve.
