Oven Baked Shrimp Flautas

Ingredients

Recipe makes 6 Servings

1 Tbsp olive oil
1 Lb Lone Star Shrimp, defrosted, patted dry
1 zuchinni, small diced
2 ears of corn, corn removed, cobs discarded
1 medium red potato, small diced
1 Tsp orange pepper
1/2 cup(s) Oaxaca cheese, shredded
1/2 cup(s) Diablo Verde Sauce
12 Flour Tortillas, warmed

Instructions

Preheat oven to 350°F. Spray a baking sheet with non-stick spray and set aside.

Heat oil in skillet and add in shrimp. Cook 2 to 3 minutes then transfer to a bowl. To same pan, add zucchini, corn, and potatoes. Season with orange pepper and cook until potatoes are tender, about 7 to 10 minutes.

Combine shrimp, veggies, cheese and diablo sauce together and mix well.

Divide shrimp filling between tortillas, roll up then place seam-side down on prepared baking sheet.

Spray finished flautas with a coating of cooking spray and bake 15 to 17 minutes or until flautas are crispy.
