Ingredients

Recipe makes 4 Servings

10 Oz lobster meat, cooked and chopped
4 Tbsp mayonnaise, divided use
1 Tsp Dijon mustard
1 Tbsp red onion, finely diced
1 Tbsp parsley
1 Tsp lemon juice
8 slices of H-E-B Bakery Country White Sourdough
8 slices H-E-B Havarti Cheese

Instructions

Combine the chopped lobster with 1 tablespoon of mayonnaise, Dijon, red onion, parsley, and lemon juice and set aside.

Heat a large non-stick skillet over medium-low heat.

Spread butter on one side of the bread and place in skillet. Layer in the cheese, lobster mix, cheese, and then bread. Spread butter on the top part of the bread.

Cook for 3 to 4 minutes per side until bread is crisp and cheese is melted. Repeat with the remaining 3 sandwiches.
