2 1/2 Tbsp grapeseed oil
1 medium sweet onion, julienned
16 Oz H-E-B Frozen Baby Potatoes Italian Flavor, cooked in the microwave according to package directions
28 Oz French Bakery Artisan Pizza Dough, 2 pizza dough's thawed according to package directions
1/4 cup(s) olive oil
8 Oz thick cut shredded mozzarella cheese

Preheat oven to 500ºF. Place a pizza stone or pan into the oven to preheat at the same time. Add grapeseed oil and onions to a medium-size saucepan over medium heat.

Reduce heat to medium-low and cook for about 15 minutes, stirring occasionally, until onions are caramelized. Reduce heat if necessary to prevent burning. Season with salt and pepper to taste and transfer to a bowl.

Remove heated potatoes from bag and slice crosswise into coins. Set aside briefly.

Flour a work surface and roll out both pizza doughs to desired pizza size. Brush with olive oil and top each with half the sliced potatoes, onions, and mozzarella. Repeat with remaining ingredients and pizza dough.

Working with one pizza at a time, place pizza onto preheated stone or pan and bake until crispy and cheese is browned, about 7 to 10 minutes.
