1/2 cup(s) fresh parsley, chopped small
1/2 cup(s) fresh mint, chopped small
1 Tsp lemon juice, juice
1/4 cup(s) Four J Sherry Shallot Vinaigrette, plus more as needed
1 Tbsp extra virgin olive oil

Cook couscous according to package instructions. Drain and set aside to cool completely.

In a large bowl add couscous, parsley, mint, lemon juice, vinaigrette and olive oil. Toss to combine and season to taste as needed.
