Instant Pot Vegetable and Beef Stew

2 Tbsp olive oil
1 H-E-B Vegetable and Beef Stew Kit, (contains meat, vegetables, cornstarch and seasoning)
32 Oz water, (4 cups)

Instructions

Set Instant Pot on "Sauté" setting. When pan is hot, add half of oil and half of meat. Brown meat on all sides.

Remove first batch to a bowl and repeat with remaining meat and oil. Return first batch to pot.

Place water in a bowl or large measuring cup. Stir cornstarch and seasoning (from stew kit) into water.

Add vegetables and seasoned water to Instant Pot and stir well. Add lid and seal.

Change to “Stew” setting and cook for 30 minutes. Instant Pot may take 10 to 12 minutes to pressurize.

When cook time is complete, allow pressure to release naturally for 10 minutes. Release any remaining pressure carefully through release valve. Serve stew in bowls.
