Halftime Ribs with Salsa Criolla Slaw

1 rack of H-E-B Natural Pork Baby Back Ribs, split
1 1/2 Tbsp Adams Reserve Sweet Pork Rib Rub
2/3 cup(s) Better Than Good Sweet Pure Cane BBQ Sauce, divided use
12 Oz H-E-B Fiesta Slaw
1/2 cup(s) mayonnaise
1/2 cup(s) Ximena's Colombian Salsa Criolla
1/4 Tsp kosher salt
1/4 Tsp black pepper

Preheat half of a gas grill to 375ºF and leave the other half off. If using a charcoal grill, push coals to one side of grill.

Sprinkle ribs with rub and rub it in with your hands.

Sear ribs over high heat for 1 to 2 minutes per side then move them to the other side of grill. Coat with 1/3 cup of sauce and close lid.

Cook at 350ºF to 375ºF for about an hour and 15 minutes. Check occasionally and adjust temperature accordingly.

While ribs cook, in a medium bowl combine slaw mix, mayonnaise, salsa criolla, salt and pepper. Cover and refrigerate until ready to serve.

Once ribs are tender, brush with remaining sauce and remove from grill.

To serve, slice ribs and serve with slaw.

Chef's Note: To make ribs in the oven, cut ribs in half and season according to directions. Bake at 350°F for an hour and a half. Cover sheet tray with foil for easy clean up!
