Grilled Orange Pepper Chicken with Sweet and Spicy Glaze

Ingredients

Recipe makes 6 Servings

1/2 Tbsp orange zest, about 1 orange
4 Oz navel orange juice, about 2 oranges
1 Tbsp chipotle in adobo, chopped
1/4 Tsp adobo sauce, from chipotles
2 Tbsp honey
1 1/2 Tsp soy sauce

Instructions

Preheat grill on high heat for 10 minutes. Meanwhile, combine orange zest and juice, chopped chipotles, adobo sauce, honey, and soy sauce in a small saucepan. Heat on medium-high for 10 minutes, stirring occasionally. Remove from heat and set aside.

Turn grill down to medium heat. Place chicken skin-side down on grill, close lid and cook 10 minutes. Flip chicken, close lid and grill an additional 10 minutes.

Closing the lid each time you baste, flip chicken again, baste with glaze and grill 10 minutes. Flip and baste, grill 5 minutes and repeat process until chicken reaches an internal temperature of 165ºF.

Set chicken aside and rest 5 minutes before serving.
