Ginger-steamed Alaska Cod with Chile Soy Dipping Sauce

Ingredients

Recipe makes 4 Servings

1 Tbsp peanut oil
1 Tsp sesame oil
12 Oz baby bok choy, trimmed and halved lengthwise
6 Oz shiitake mushrooms, halved
1 ginger, 3-inch piece peeled and julienne-sliced
1 green onions, trimmed and sliced
4 H-E-B Wild Alaskan Cod Fillets (4 to 6 Oz each), fresh, thawed or frozen
1/3 cup(s) Kimlan Low Sodium Soy Sauce
2 Tbsp rice vinegar
2 Tsp red chile, minced
1 Tsp garlic, minced
1 Tsp sugar

Instructions

In a deep frying pan heat peanut and sesame oils over medium-high heat, and sauté bok choy and mushrooms until crisp-tender; remove, and keep warm.

Wipe pan clean, and bring 1-inch of water to boil; turn off heat; place metal steamer basket in pan and open up sides; portion ginger and 3/4 green onions in basket.

Place cod fillets in steamer, and return water to boil; cover loosely, and steam until fish is opaque throughout, about 5-7 minutes (reduce cook time by half for fresh or thawed fillets).

Thoroughly mix soy sauce, vinegar, red chile, garlic and sugar for dipping sauce, and set aside.

Serve cod over vegetables with dipping sauce.
